Apple et all 5 spices Cake

Made a kick ass cake last night.. easy, no mixer needed, just a few bowls type of cake that has a lot of fruit inside..

It is based on a recipe I got from Debs (Smitten Kitchen), and I have told you how much I love that woman and how much she has helped me over the years! 

So, let's see why you should make this cake

a) tastes wonderful. The combination of apples, pears, quince etc it is wonderful and especially the quince gives it a lovely acidity that really cuts down on the sweetness of it. 

b) it tastes even better the next day.. The juices from the fruit really turn the cake into some sort of custardy realness and it is just beautiful! 

c) just because! 

You can use apples, pears, quinces or any combination of those.. You will need about 6 fruit total...

Used 5 spices mix.. love the aniseed and the fruity Sichuan pepper and their effect on the cake it is just wonderful! And a fruity olive oil also gives a lot of character.. 

So anyway! enough talk, let's go bake a cake!

Serves:a lot of people


For the fruit

6 apples, pears, quinces or any combination of those

70g of plain sugar

1 tblsp 5 spices mix


For the cake

360 g all purpose flour

1 tblsp baking powder

1 tsp salt

5 medium eggs

400g of plain sugar

240g fruity extra virgin olive oil

60g milk

2tsp vanilla extract


Peel the fruit, remove seeds and cut them in 1 cm dice.

Mix them up in a bowl with the 70g of sugar and the 5 spices mix.

In another bowl pass through a sieve the flour, baking powder and salt.

In another bowl mix the rest of the ingredients. 

Add the two mixtures together and mix using a wooden spoon.

Transfer a bit less than half of the cake mixture into a cake pan

Scatter half of the fruit on top.

Add the rest of the cake batter followed by the rest of the fruit and what ever juices there are left in the bowl.

Bake in a preheated oven at 170 celsius for 80 minutes or till a skewer that you push through the cake comes out clean.

let it cool down for 30 minutes and then flip it out on a dish... 

Eat cold and even better on the following day.
